The last time I watched the DVD I had closed captioning on instead of subtitles, and I swear closed captionong is all-knowing! When the ring is speaking it says [TALKING IN BALCK SPEECH] and at the time on Caradhras when Gandalf and Saruman are chanting, it says [CHANTING IN QUENYA] and [CHANTING IN SINDARIN]. What the exact translations would be I have no idea, but it really doesn't make that much of a difference to me.

Does the DVD really do that? I've got to try it! Finally I can get the bits I ALWAYS miss! Does anyone know if it has subtitles for where Gandalf's talking to the moth? I still think he's debating whether to eat it or not...

I was able to partially tell what Arwen said at the Ford: when talking to Frodo, she said "Lasto beth nin....." which means "Hear my voice", and I heard her say that along with 'Bruinen' at the Ford.
And at Rivendell it is saying,' Ash nazg gimbatul, ash nazg gimbatul.....'
