Recipes

I looked and I didn't notice any recipe threads. I know tater likes to cook - so I figured I'd see what other people's favorite recipes are. Anyway - here is one of mine, although I haven't cooked it in a while. I got this idea in the Mmmmm, meaty thread.

Cornish Hens a'la Orange
French/Poultry

Ingredients:
3 hens
1 16oz pkg wild rice
1 4oz can mushrooms
1t finely shredded orange peel
1/4 cup orange peel
3T brown sugar
3T corn starch
2/3 cup water
1/2 cup orange juice
1/2t instant chicken boullion
1T margarine

Recipe:
Prepare the orange peels by slicing away the inside of the orange peel. You should be left with only the outer covering of the orange peel. The inside white area is very sour and should be completely removed.

Cook rice adding the mushrooms and shredded orange peel.

Split cornish hens in half. Stuff each half with the rice mixture and place in a baking dish; rice down. Place a slab of margarine on each half. Cook at 350 until browned and tender. The hens should not be pink on the inside.

Slice the 1/4 cup orange peels into julienne strips. Add the sliced orange peel, the brown sugar, corn starch, water, orange juice and the chicken boullion.

Slowly simmer the mixture and stir constantly until the corn starch and sugar are completely disolved.

Raise the temperature of the sauce until bubbles start to appear and then lower again. The sauce should thicken and become a glistening orange color.

Remove the hens from the oven when done and place one half on a plate. Spoon some orange sauce over the hen and serve!

the Middle Earth recipe thread, i think tano started it. i'm not sure what forum it's in, probably Middle Earth.

(mostly lembas tho, various recipes)

For all you aspiring chefs out there, I highly recommend getting a subscription to the magazine Cooks Illustrated. Calling it a magazine is really unfair though. Every issue is like a beautiful cook book! Printed on very high quality paper to boot. Each recipe is tested (often hundreds of times) till they come up with the best way to prepare every single dish they publish. Sometimes they even go back and improve on their own recipes! Everything I've made from the magazine has been incredible. A word of warning though for the faint at heart, they like their food hot!!!!!!!!!! which is fine by me, but has made my mother and sister turn bright red while eating certain dishes

mmmm, recipes.

1 cup flour
1/2 cup milk
4Tbs. of butter (melted.)
dash of salt
cookie cutter (what ever kind.)

Put flour and butter in. Then add milk slowly, but so that the dough doesn't became to moist. Then add salt. Mix it all together then place a little bit a flour on the table so the dough doesn't stick to the table. Then roll the dough out. Place they cookie cutter and cut each section of the dough out. Place in teh preheated of of 350o. Bake 10-12 mins. Tip: Make sure the dough is not to thick, makes it bad. Trust me. Enjoy!!

Uh no, no plans to post copywrited material. Just get yourself a subscription to the best magazine ever produced. Also, watch their cooking show "America's Test Kitchen" on PBS
