I like a lot of fantasy written for children. Not sure if it would suit your taste. Just a few suggestions off the top of my head

by Madeleine L'Engle
A Wrinkle in Time and the books following it

by C.S. Lewis
The Chronicles of Narnia (7 books)

by Susan Cooper
The Dark is Rising series

not written for children:

surely you've read Anne McCaffrey's Pern books?

C.S. Lewis' space trilogy (Out of the Silent Planet, Perelandra and That Hideous Strength)

Barbara Hambly's Dragonsbane

The Mists of Avalon by Marion Zimmer Bradley

The Chronicles of Thomas covenant by Stephen R. Donaldson

for humorous fantasy, Piers Anthony's Xanth books

I cannot recommend Mists of Avalon enough. It rivals LotR in its pure good-ness.

ooh! I read the War of the Flowers by him and finished it just yesterday before i posted that; i didn't know he had written more! cool!
and with the RA Salvatore books, are they the kind of books where you have to read every one in the series in the exact order in which they were published?

I have not read War of the Flowers yet, but Williams is one of my favorite authors, along with Tolkien and Martin. Williams also has a Science Fiction trilogy called Otherland, I can not remember the names of the books since I have not read them, not much into sci-fi. Williams also has a short story in the Legends book that takes place around 100 years before Memory, Sorrow, and Thorn.

Legends also contains short stories from Stephen King (Dark Tower series), Ursula LeGuin (Earthsea series), George RR Martin (A Song of Fire and Ice), Robert Jordan (Wheel of Time), Terry Goodkind (The Sword of Truth), Terry Pratchett (Disc World), and many other top selling fantasy authors. Legends 2 just came out and has a short story from Williams Otherland series. It also has stories by Martin and Terry Brooks (Shannara series).

The Salvatore books have to be read in order, all seven books are centered around the same characers. Mortals could be a stand alone book, but it would be hard to follow everything that is going on.

Tad Williams is an amazing author and so is George RR Martin. (Does anyone know when A feast for Crows is supposed to come out?) Another really good book by Tad Williams is Tailchasers Song. The Otherland books are:
1. City of Golden Shadow
2. River of Blue Fire
3. Mountain of Black Glass
4. Sea of Silver Light

If you like the Forgotten Realms books you should try The War of the Spider Queen and Starlight and Shadows.

The Princess Bride is also really good.

oh good; i knew he wrote a million books in the forgotten realm series and i was hoping i wouldn't have to read them all to get to the one i really wanted to read.
i always do that; pick up a book, say "oh, this looks cool!" and then realize that i have to read the first nine or whatever in the series first.

I haven't even heard of half the F.R. books I just started reading the ones about the Drow and Evermeet. I don't really care, I understand what's happening in that series and I think that's all that matters.
