Argonath
These Pillars of the Kings are only mentioned briefly in Fellowship of the Ring. I know that the two kings are Isildur and Anarion, but who built the Argonath? When and why? I guess there might be more information about them in the Silmarillion, but if there is, I haven't made it that far yet. Can anyone enlighten me?

Supposedly, the pillars were built during the Regency period, c. 1250 (3rd Age). I think they were built to signify the northern-most border of Gondor at that time.
I believe there's more information in Appendix A of LotR.

It is kind of confusing as "Of the Rings of Power and the Third Age" says it was built in the days of the exiled Numenorians power, and appendix A says it was built during the regency period. One must assume the appendix is correct (as sometimes there are contradictions).
