Hmm. Given that
girls= love horses, and that women in Rohan seem to be rather independent, I'm surprised no one's opted for the Riddermark. (It's also near elves, talking trees, mountains, and, with horses, not that far from the sea. You can go on holiday to the big city, visit scary Mordor, or sail to the far south (on a cruiseship based at the Grey Havens or Pelargir, includes stops on the Angren, Dol Amroth, and the ruins of Lond Daer!).

I'd have to say Arnor– because of it nobility, and because of its tragic end, and because the concept of the Dunedain is really romantic…

Mine would also be (Loth)Lórien... and as for the question if it really IS a kingdom:
"A woodland kingdom of the Silvan Elves on the western banks of the River Anduin; Galadriel and Celeborn came there in the Third Age, and ruled it after the loss of its ancient lord, Amroth. " (from "The Encyclopedia of Arda" ) And also from that site: King of Lórien: "An ancient title for the rulers of the land of Lórien, of which Amroth was the last." |

Well, Rivendell though it's not really a kingdom.
Also Doriath and Lothlorien

If Imladris was a kingdom, I'd say that, but because it isn't I say Numenor. It must be "cool" to be surrounded with all those wise men (and women).

Is Mirkwood a Kingdom? If it was I'd go there... Even though it's creepy. I'd probably like it better after the Third Age. H'm... If Mirkwood isn't a Kingdom, then I'll say Lothlórien. Or the Riddermark. It sounds (and looks, to me!) cool, too!
