Why are the misty mountains called the misty mountains?

Because, if you look at a passage from one of the first chapters of Fellowship of the Ring, it says:

"We randomly named these mountains the Misty Mountains because we felt like it. Actually, it was because someone said the word misty when they were describing the weather outside at the time and so we just used that."

What if Sauron had gotten the One Ring, would the eye have turned blue?
