Is the answer to the fangs riddle- the wolf that killed all the Elves in Tol-in-gaurhoth?

Well, the only other thing I can recall in reference to fangs is Ungoliant sucking out the sap of the Two Trees. What about Kieth?

Yes, it along with Narchost, the Teeth of Mordor.
"turn on" refers to the fact that they were once towers of Gondor, but now were used against them.
"in sleeping lies weakness" also refers to the fact that the Dunedain slept and evil crept back into Mordor under their watch. This is mentioned in the appendices. Way to go Radagast!

Are you a wight? (not quite a living being?)... Or even the downs themselves... maybe the fangs are those stoneworks that mark the northern boundary...??? (EDIT: Whoops... cross-post!)

Okay, here's a quick one I flung together for y'all while I attempt to come up with something more challenging:

Upon a small hillock they made their stand.
Within a ring of boulder stones, a fire was at hand.
Suddenly beyond the ring the enemy was there.
Leaping in the firelight and singeing all their hair.
Back to back defenders fought to try and stem the flow.
Arrows flying in the night kindling as they go.
