The dude from Last of the Mohicans (The full-son, not the half-son) When he tried to save his love but died doing so. Then his love killed herself by jumping off a cliff edge! That indian guy who died trying to save his love was the only cute guy in the movie!

How about Samuel on Legends of the Fall? It freaks me out a bit what Brad Pitt does afterward, but I do like (gee, this is gonna sound morbid) that he's literally choking on his own blood. It's so well done, too, when Brad Pitt is running up, and you know he's not gonna reach his little brother on time. It's quite heartbreaking.
p.s. the rest of the movie is dumb. The Terminator - Terminator 2 Kinda sad in a different way. Oh, and Esparanza (spl?) on The Mask of Zorro. Quite a touching scene, even though she did have a little part. Back to Jack Dawson... I can't remember if I cried (.. when I read about his widowed bride.. ) when I watched that part. It's definately sad, but I already knew he was gonna die, cuz a friend told me. I don't think the "I'll never let go, Jack" is a dumb line. He told her never to let go of her promise to survive. She had to let him go to hold onto her promise. I like the Irish guy's death scene, though. He was such a cool guy, and then to just be shot over something that wasn't even his fault... so sad.
