I think the questing beast was the White Stag, if I am not mistaken. One of the mighty knights, Sir Pelenor was vowed to go after it, if I am not mistaken. It's been ages since I read any Arthurian legend though.

According to Wikipedia (as a swift, but necessarily reliable source) the Questing Beast had two forms, or two different entities were named the Questing Beast. One fair and one a mix of snake, cat and whatnot. Can't say I know anything beyond that. Basically, reading the bits about it in the Morte D'arthur left me saying "Eh? Come again?"
