Jedi Training
Luke's training with Yoda was pretty brief wasn't it? There's probably a lot of stuff left untaught, there's no way Yoda can teach the whole Jedi syllabus in a few months (as I estimate Luke's training).

Lucas said in the DVD commentary that to be a Jedi, you have to be reconised at a very young age, so came the reason for Anakin's original denial of training, when you are reconised by council you are given into the care of Yoda and he trains you for a number of years then you are given into the hands of a Jedi Knight to become his Padewan learner.

It seems to me that this whole "he is too old" thing is all wrong. All of Luke's first students were adults. That, and Yoda isn't always right ("if once you start down the dark path, forever will it dominate your distiny").

Well it can be said that Luke started a new order of the Jedis, with new rules and orders, such as any aged people can become Jedis, though they wouldn't be as skilled as a person who has been training as long as they can remember.

What I don't get...
... is how Yoda says "he's not ready" and then says Luke is too old. What would it matter if he was ready or not if he's too old?

Age matters a lot. People create preconcieved notions about the world. To a older person like Luke who had no exposure to the force as a child, it would be much harder for him to learn. Especially due to the ammount of science that Luke would have known. He knows about the laws of gravity, and other natural laws of the univerce. His initial thought would be that certain things aren't possible. A young child that grew up knowing that size doesn't matter would have a considerable advantage.
