Any of them will work. I know I gave one of my friends Night Watch (which comes at what is so far the end of the Watch series) and she still devoured it and went on to more. I personally started with the Colour of Magic, and it is a fairly good start, but Mort (the first Death one, I believe) is a very good spot to start, and for a long while my favorite (since surpassed by Night Watch).
