Artichokes should be left green, cause that's their natural color... no white pasty goop.
Onions aren't evil.. I think you're confusing Onions with Onion-breath. After eating an onion-laden meal, take a couple hundred swigs of mouth wash (or alcohol if you're a "MANLY ELF" ) Peppers are good... red green and yellow.. cooked or raw. Ahh the crunch.

If you cook them right, they stay crunchy but get hot. Very nice.

No. Some cheese has rennet in it, as opposed to vegie rennet...
